Oden Stew & 3-Course Winter Tasting Experience the warmth of a traditional Japanese winter through a sustainable, professional lens. This course focuses on the "Circular Menu" method—a signature of mi no kuriya—where no ingredient is wasted, and every flavor is repurposed. MENU 1. Oden Stew: A tapestry of ten flavours. More than just a winter stew, Oden is about the curation of texture. While the pot holds ten different elements, these two are the essentials for any fashionable table: ・Simmered Egg ・Daikon Radish ・Musubi Konbu: Kelp ・Konnyaku: Devil's Tongue ・Ganmodoki: Tofu nuggets ・Mochi Kinchaku: Mochi in a fried tofu pouch ・Chikuwa: Tube-shaped fish cake ・Atsu-Age: thick fried tofu ・Ito-Konnyaku: Translucent noodles made from Konjac yam ・Satsuma-Age: Fishcake *Allergens: Soybeans, Molluscs, Eggs 2. Daikon Skin Salad For our side dish, we use the thick-cut skins from our Oden Daikon. Most people throw these away, but they hold the most incredible crunch. Sustainability never tasted so chic. *Allergens: Eggs 3. UDON Noodle After making my IMOTSUKI sweets, I had some egg whites left over—so they went straight into this cosy bowl of Udon! I used a savoury Oden soup base and topped it with shredded yam (Nagaimo) mixed with those egg whites for an extra fluffy, "fluffy cloud" texture. It’s light, healthy, and the perfect savoury balance to the sweet potatoes from earlier. *Allergens: Wheat 4. IMOTSUKI: Sweet Potato Moon This original Japanese sweet is crafted from rich mashed sweet potato, golden egg yolks, and rice flour. It’s soft and holds the warmth of winter in every bite. Cancellation Policy
If you give us 14 days or more notice prior to the date of the cookery class booked, we will refund 100% of the amount you paid for participants that are no longer attending. If you give us less than 14 days’ notice and at least 6 day's notice, we will refund 50% of the amount you paid for the participants that are no longer attending. If you give us less than 6 days’ notice we are unfortunately unable to offer any refunds.
